Toro

Great tapas, long lines

WORTH THE WAIT? Crowds flock to Toro for very good tapas.I like everything but the name and the lines. The name is a set-up for headlines like “No Bull.” But the headline here should be “Great Tapas, Long Lines.” I won’t stand in lines. I will eat early or late to avoid them, because I will not wait. When I called for a reservation, the person who answered said they don’t take reservations, but if we came at 6 pm on a Sunday, there would certainly be a table. That was two lies: when we did as instructed, there was a reservation that had been taken for 13 people, and the only other tables available the chef needed in an hour for some of his friends.

I don’t mind liars, actually — they make good copy — but I still won’t stand in line. There are, however, a few tricks, and right around the corner was the buzz-hating reviewer’s new best friend, Super Bowl Sunday. Toro has a live fireplace, but no TVs. So this time we were able to walk in without a reservation at 7 pm, but don’t expect that kind of luck until next October during the close of baseball season.

For the benefit of those who will stand around for up to two hours, and those who won’t but are curious about what motivates those who will — here’s the report. Toro is a very good tapas bar. A lot of high seating and semi-communal bar seating in an open room stripped back to bare brick conveys something of the open-air quality of Spanish tapas bars. The food captures some of the authentic flavors of Spain, and much of the spirit of tapas. You might not think of owner Ken Oringer warming up for a tapas bar with a fusion restaurant with tiny portions (Clio) and a Japanese-style sushi bar (Uni). But tapas are small portions, and when they are right, they have the perfect minimalist quality of haiku, or sushi. In a highly flavored Iberian way, of course.

Food starts with a basket of crusty bread with big holes, excellent for picking up any stray bits of food or sauce. The smallest tapas are “pinchos”; ours, of ventresca (belly) tuna ($3), was a perfect morsel of the greatest canned tuna on the planet and came set up on a toast with some chopped tomatoes. Of course, ventresca tuna is also a multilingual pun on the name “Toro,” which in Japanese is used for sashimi-grade belly tuna.

Your real decision is whether to order paella (Valenciana/$32; vegetarian/$28). As a hedge against real hunger, it serves four easily and six or seven if you’ve been hitting the tapas reasonably hard. But it takes almost 30 minutes to make, so you have to decide whether you want it when you walk in.

The best buy here is maiz asado ($3.50), four pieces of grilled sweet corn (not an easy trick) covered with an addictive crust of garlic mayonnaise and salty cheese. A classic tapa, the hearty potato omelet known as tortilla ($5), is here more of a tease — three cubes about an inch on a side, with some garlic mayonnaise. Peasant food made tantalizing. Another classic, gambas al ajillo ($10), is five large shrimp in a creamy garlic sauce that just won’t quit. Here’s where you want that bread.

Toro
Just got back from Barcelona and I have to say that not only Toro is authentic but may be even superior in tapas flavor. I agree with the article all the food is delicious and I do love the paella valencienna. I also like the fun atmosphere and the hopping quality and energy of the place. I love Champagne so I love how they pour it with the poron. This makes everybody around the table have a good time and laugh. Highly recommanded.

Toro article February 15th 2006 by Robert Hadeau. 18 months later... Unfortunately the state of food in Phoenix seems caught within the American food paradigm, i.e. Japanese, Chinese, Italian and Mexican food influences. Phoenix, as another American city, is pretty typical. Toro, as a restaurant, is no different. One theme that runs through the vast overwhelming majority of restaurant and supermarket prepared food is the aversion to spice. It seems that whatever nationality the food is meant to represent, the notion of preparing it with authenticity is difficult. All too often there is a definite absence of true flavor. It seems that in order to make food more appealing to the American palate that it has to be subdued by the addition of copious quantities of sugar and salt. The addition of spice is marginalized and the description of something being 'spicy' is actually reserved to refer to how pepper 'hot' it is. Hence the national pre-occupation with sweet and sticky BBQ, orange chicken, etc etc. Tip - if Chinese people really ate American Chinese food, they would all be obese and diabetic. Toro is striving to present Spanish food in an equitable way. In a way that Americans can slot right into, without making too much of a culural leap. This is always difficult when treading the fine line between what people will relate to and already have a point of reference for and what may be too culturally realistic and therefore removed from their comfort zone. I can only conclude though, that as I have eaten Spanish and other culturally individual foods in different countries, that the flair and and the flavor are never consistent. In European countries, such as England, where there are large populations of Indians and Pakistanis, for example, this ethnic food is outstanding for it's authenticity. Having larger immigrant populations seems key to ensuring that food will be more reliably authentic. Spanish paella is readily available in all European supermarkets. I am unable to find it in Phoenix supermarkets. This is ironical since Phoenix has such a strong Spanish heritage. It is difficult to say whether international food in Phoenix will ever be described as truly authentic. The majority of restaurants have a long way to go to overcome the bland and sweet cravings of the American public. Eventually supermarket food may show some greater moves in a more authentic direction. Changes in habits and thinking always take time.

    I have to admit I giggled when I got a press release describing this restaurant as being located in the “white-hot West Roxbury-Dedham dining scene.” After all, the space had already killed a reasonably good steak house, Vintage, after a long closure in which it tried to upscale, then ended up downscaling by adding red-sauce Italian dishes.
