When all is said and done, it's important to remember that it's just another night. "Have fun and don't take it too seriously," says Bryn Tattan of Backbar. She's seen too many people get upset because reality didn't live up to their idea of the night. "What really changes when the ball drops?" Nothing but the number on the calendar — and maybe your drinking routine. Tattan is trying to shake up the latter with experiments in carbonating wine cocktails. Her Left Bank cocktail riff uses Plymouth gin, St. Germain, and white wine, either a riesling or a muscat. The idea is to "reinvent the concept of a Champagne toast," she says. It ends up challenging the integrity of the wine, but it's a unique twist on an old favorite. That sounds new enough for a new year.
