Humanity is like stew beef

By LINDSAY STERLING  |  February 13, 2013

As we were cooking we didn't completely ignore our differences. We had a conversation about a woman covering up being, in this Somali woman's mind, about modesty. Modesty is not America's strong point. If Alexis Wright had been covered the whole time in a long dress and headscarf, how many families wouldn't be ruined? But we didn't talk about this very long; after all, the food was ready and it was time to eat. Surprisingly, chapatti and stew, all the way from a place as different as Somalia, was comfort food even to my kids when I tried it at home. Humanity is like stew beef, I guess. There are just a lot of different ways to make it good.

Find the recipe for Somali chapati and stew at  immigrantkitchens.com. Learn how in a live cooking class May 10.

Learning to cook with exotic ingredients is exciting, but what I like even better is seeing someone use an extremely familiar ingredient in a completely new way. It's both uncomfortable and invigorating. One minute you think you know something about an ingredient, and then the next minute you see that you don't know the half of it.

Sudha's display of spices looked like a painter's palette of India: yellow turmeric, brown cloves, white salt, brilliant orange-red chili powder — not the maroon stuff you find at the supermarket.
