The bartenders at THE CELLAR in Cambridge have to be some of the nicest guys in town, so it's hardly fair to consider them pushers for their establishment's notoriously delicious rosemary-truffle fries. Kissed with just the right balance of salt, seasoning, and truffle oil, the skinny-cut frites have established their own street value, inspiring bar-goers to either experiment with the terra-cotta potful of fries that accompanies each sandwich or mainline a $5 dish piled high with the stuff. The bar's subterranean location, low lighting, and retro soundtrack only add to the sensation that diners are starring in their own cautionary tale about addiction, but by the third or fourth handful of these decadent fried spuds, no one cares.
