Chef Christos Tsardounis didn’t wait for the inevitable. He down-marketed his own bistro, Ariadne, keeping favorite appetizers in slightly less elaborate presentations, adding superb thin-crust pizza, and very reasonable entrées. Didn’t see that great Ariadne rack of lamb, but we bet it will be a special, because the nice room and well-dressed crowd didn’t skip a beat, either. They just can afford to come more often.
